Maple Almond Cookies


I've been baking up a storm ... and I am so excited to share my creation with you! These cookies are both delicate and delicious. Their light almond flavor and texture is reminiscent of a sugar cookie.

We've been enjoying these cookies in our house for a couple of days now. But they are nearly gone. A treat this good doesn't last long around here!

Maple Almond Cookies
Inspired by my momma's PB cookies

Ingredients: *Yield 48
1/2 c. butter, softened
1/2 c. granulated sugar
1/2 c. brown sugar, lightly packed
1/2 c. almond butter (I used maple almond butter)
1 egg
1 tsp. baking soda
1 tbs. boiling water
1/2 tsp. maple flavoring
3/4 c. all-purpose flour
3/4 c. whole wheat four

Directions:
1. Preheat oven to 350 degrees.
2. Using a hand held or electric mixer, cream butter, sugars and almond butter together until smooth.
3. In a small bowl, mix soda into boiling water.
4. Add soda water and egg to bowl with creamed mixture.
5. Add maple flavoring and mix until blended.
6. Add white and wheat flour and mix until evenly blended.
7. Spoon dough onto baking sheets using 1/2 tbs. scoop or measuring spoon.
8. Bake for 8 minutes or until edges are very lightly browned. Do not over bake. Remove from heat and transfer to cooling rack.
9. Serve hot with cold milk or hot tea. Enjoy!

  3. Love love love anything with almonds! My mom and sisters make fun of me because I eat them everyday and carry some in my purse, ha ha.
