Mango Madness Cocktail

Dan and I vacationed in Puerto Rico a couple of weeks ago. We enjoyed a full week of much needed R&R!

It was glorious. I was so relaxed, I took very few pictures. Nearly all of them of food! Thankfully, I have a couple pictures to at least remember our laid back trip.



Together, we sipped on fruity beverages while overlooking the beach from the comfort of our lounge chairs. Since then, I’ve had adult beverages on the brain.

Moscow Mule



Have you had a Moscow Mule? I am currently in love with them. Typically served in a copper mug – on my wish list now – it stays ice cold. Plus, it is just fun to drink from a copper mug glistening with condensation.

I recently learned that the Mule is a big drink in Denver. Well, I can see why because it’s a perfectly fresh and crisp drink for clinging to the final days of summer.

Recipe:
2 ounces vodka, chilled
4 ounces ginger beer
½ lime or juice from 3 lime wedges
Crushed ice
Serve with mint sprig (Optional)

Boozy Berries


In celebration of the summertime fruits currently filling the produce section of the grocery store, I was inspired to make a healthy and fruity dessert. And really, who doesn’t like a little adult beverage twist to a healthy snack?

The recipe – (I acknowledge the loose use of the word here) - is very easy. It’s as follows:

Fresh berries of choice, thinly sliced
Dessert wine, chilled
Low-fat, organic vanilla yogurt
Lime zest

Layer the berries in a clear drinking glass or container, drizzle berries with dessert wine and chill. When ready to serve, place dollop of yogurt on top of fruit layers and garnish with lime zest. Serve chilled.

Skinny Ritas



It’s August in Denver and HOT. At the end of a summer day, I’d like a cocktail. A margarita sounds refreshing. And to go one better, let’s make it healthy too - relatively speaking of course! The ‘skinny’ part of the margarita comes by using Fresca which is a zero calorie mixer. Cheers!

Mixology:
8 fresh squeezed limes
36 oz of chilled Fresca
6 shots of Tequila

Serve over ice with lime wedge garnish. Serves 4.

Tip: Put the limes in the micro for 15 seconds prior to squeezing as it makes juicing easier.
