New Series & Garlic Herb Popcorn


I sure do love my salty, crunchy snacks! And I am a huge fan of popcorn.

Popcorn is a staple in my snacking diet. It's a satisfying alternative to other fat-laden salty snacks such as potato chips.

The good news - popcorn is a natural, healthy source of fiber. And inherently, popcorn is a healthy snack choice...it's all the stuff we do to it - adding butter, butter and more butter - that takes popcorn over to the dark side.

My taste for popcorn has inspired a new feature you'll see here. This is the first of my new Friday series - devoted entirely to popcorn! Flavored popcorn in fact. Perfect for weekend movie nights!
Garlic Herb Popcorn
Ingredients: * Serves 2
1/3 c. white popcorn kernels
1 1/2 tbs. canola oil
3 sprigs fresh thyme
1 sprig fresh rosemary
3/4 tsp. garlic powder
salt to taste

Directions:
1. Remove leaves from thyme and rosemary sprigs by pressing two fingers together and pulling downward to sprig bottom. Finely dice.
2. In a medium pot, add oil, herbs, garlic powder. Heat to medium to medium-high heat.
3. Add popcorn kernels and stir until covered with oil mixture. Cover with lid and without removing from heat, shake pot occasionally. Pop corn until popping slows to near stop. Remove from heat immediately and season with salt to taste. Transfer to serving bowl.
