Mango Madness Cocktail

Dan and I vacationed in Puerto Rico a couple of weeks ago. We enjoyed a full week of much needed R&R!

It was glorious. I was so relaxed, I took very few pictures. Nearly all of them of food! Thankfully, I have a couple pictures to at least remember our laid back trip.



Together, we sipped on fruity beverages while overlooking the beach from the comfort of our lounge chairs. Since then, I’ve had adult beverages on the brain.

How is it that every tropical vacation destination has the most amazing drinks? Where can I get some of those in Denver? I suppose I’ll just make some myself.

I feel especially justified in doing so since it’s been unseasonably warm here – and all across the nation apparently. Bring on the summery drinks!


Mango Madness Cocktail
Ingredients: * Yield 2
2 oz. champagne mango puree (1-2 whole mangos)
2 oz. rum
6 oz. Fresca
juice from 1/2 lime
1/2 c. ice
Lime wedge for garnish

Directions:
1. Peel mangos and remove flesh from pit. Pure mango in food processor until smooth.
2. Add all ingredients to shaker or large glass. Stir together until well blended.
3. Pour into glasses and garnish with lime wedge.
4. Put your feet up and imagine yourself on the beach while sipping your cocktail.
